I speak ONLY from experience so here goes:
manure outperforms coir. yes. no debate as far as im concerned
that being said
manure turns to a yucky mud where the "squeeze" method of checking moisture doesn't work. you squeeze it and it just plops out disgustingly between your fingers. Which is why I add like 40% verm. To give it the familiar "substrate" texture.
Mushrooms are like 90% water. Fine grade verm holds WAY more water then manure alone
its not always about nutes
Now if you take the coir, add gypsum and coffee, and pasturize correctly, youll have something that will come in neck and neck with manure.
Now add a handful of manure to your coir and you have a substrate that is not only potent, it is user friendly, and very fluffy ( you want fluffy)
oh upside to coir: its colonized WAY faster then manure. Goes back to that fluffy line

Eco earth rocks, I'v used that same brand. Since your just begining IMO it would be best with you to start with coir, the first additive you should start playing with is gypsum. When your confidant there , then start adding other things.

Good luck man coir kicks ass. Don't start thinking youll get a sub par flush just becasue you went with coir. youll get great flushes with it
get gypsum. it is powerful
oh, and i know my thoughts are getting scattered but you should add verm to your coir bulk sub too, like 25% but works fine without. good luck

Since this thread was originally about SHROOM SUPPLY's pre-pasteurized manure compost, I thought it would be appropriate to chime in.

Our compost is a fantastic product. As a matter of fact, it is our best selling product and IMHO the best quality bulk substrate blend available on the market. It is way better than anything you'll be able to make yourself without great resources and a lot of hard work.

Our compost is composed of six main ingredients including an organic compost specifically designed for mycological use, dehydrated horse manure, exotic zoo manure, organic coconut coir, vermiculite, and gypsum. This diverse blend of unique ingredients provides the perfect amount of nutrition for optimal mycelial growth, making it the ideal growing medium for mushroom cultivation.

Our compost has been in working development for close to a decade and we have been selling it for over three years with nothing but positive feedback. We have some customers that order several hundred pounds of the stuff on a monthly basis. Trust me... it's GREAT stuff.

The best part about it is that it comes pre-pasteurized and hydrated to the perfect moisture content, making it ready to use right out of the bag. Simply add colonized grain spawn, mix, and add to your fruiting chamber or grow bag.

Question on gypsum. I have found pellets of gypsum but not the powder. Where do folks but gypsum powder?

pelletized is the same thing...measure it like u would powdered gypsum.

pellets just have a binding agent in them...they dissolve in water

The pellets will dissolve. It is slower than powder though. Sometimes when I get bored I'll put pellets in a thick plastic bag and smash it with a hammer. It can get messy but it seems to work OK.

Gypsum is gypsum... simple as that. It just depends what is available in your area. We sell a granular gypsum that isn't quite powder but is significantly smaller than traditional pelletized gypsum.
