Surface layer of monotub not fully colonizing. Thinking about fruiting.

The surface of my monotub hasn't made any progress since like day 5. Its been 2 weeks now. The sides and the bottom are all colonized. I think it's because too much water is dripping on top of it. Also, the temperature in the room dropped from 80 to 73 degrees last night (still 73), so i think now would be an appropriate time to fruit. I've got some rhizo on the sides of my tub as well. The top just looks patchy. Suggestions?

2 weeks? I don't even check mine for 3, and don't fruit until some pins appear. You'll have a way better pinset and a lot less likely to pick up a contam if you wait for full colonization. Patience is your best friend here.
