oyster mushroom question

A local fine dinning restaurant is willing to do business with me  they want shiitake and oyster mushrooms. What oyster mushroom should I choose. Yellow , pink , grey, or phoenix or is there another that would be more suitable?

Grow them all, they all use the same substrate and growth environment :smile:  Variety is usually attractive to the customer :smile:

I already have them all so I guess that will work I was thinking flavor and as a chef each one has a distinctive taste that might conflict so when I asked which one would he prefer he said it did not matter so I wanted to choose the better more potent one. But they all seem the samebtonme just different colors.

Don't pick pink, they taste like shit. Not all oysters are the same and the growth conditions can vary. I personally like growing king and blue oysters both for taste and aesthetics.

That's the first bad review I've read on the flavor of any oyster, what substrate did you grow it on?  The king and blue definitely are popular though.  I like the look of the yellow colored ones, but you want to harvest them before they mature too much or they fade to white.

As a sioux chef, let me tell u that unless the dish is made around the mushroom, it won't matter.

Grow king oysters, u can use the stems

And variety, as stated above, is good
