I always thought it was due to their strong flavor, although I've never eaten the mollusk.

Why do you think they are called oysters (fungus)?

When cooked, the texture is somewhat similar.. and they impart a taste somewhat similar to cooked oysters (but yet so far away, lol - especially from the canned ones -- YUK!). - I think the main reasoning, is they are a good subsitute, but not necessarily all too similar, just a good replacement. Bivalves are mmm mmm good, though.

I always thought it was bacause of the way they looked.. they don't taste salty or fishy like real oysters  :tongue:

Since this topic is on the oyster mushroom, I'd like a little info on the wild variation of this species.
Last year I was doing a little mushroom hunting on my farm and came across a large area in the forest, that was loaded with this species. I could've literally filled up the bed of a small pick-up truck with these mushrooms. Throughout the year, the area continued producing, when the conditions were right.
I know that cultivated oysters are sold on the market. Is their a viable market for the wild variation?
Does the USDA have certain guidelines regarding the sale of wild mushrooms?
And at what stage of growth, size, etc. is the best time to harvest for the best flavor?
I'm planning on, if nothing else, picking some for myself to cook up.
I realize that these questions may have been already posted somewhere here, so if no one feels like repeating the same ol' answer to the same ol' question,  you can just give me some links that may help.

BTW, I also found ( early last fall ) what I believe to be an extremely large fruiting of the honey mushroom. It covered about an acre or more of the forest. I've never seen a single species dominate an area like that. It was amazing .Now if I can just find an area like that covered with P.weilii,I'll really be shitting in high cotten  :wink:)
A good link on info for the honey shroom would also be helpful.

I had always assumed they were named because of their somewhat similar appearance to real oysters.  After eating one, though, I have to say that their texture and taste is more similar to actual oysters than their appearance is.

Whatever the reason, they are aptly named! :smile:

Our white, alder variety has a distinct sulphureus slight oyster flavor(similar to a dash of oyster sauce)It is faint but apparent in smell and flavor.
BTW they are delicious saute'd w/onion,apple,shallots,tarragon and some chicken breast if you wish for a meaty dish.

I guess it's an old local (Southern U.S.) expression. Sometimes I forget that people here at the Shroomery can be from anywhere in the world, so they may not know what the hell I'm saying when I use local slang.
" Shitting in high cotton" is another phrase for "everything is great" or "it's as good as it gets".  It means the cotton (plants) have grown tall enough in the fields, that you can take a shit out in the field and no one will see you. And you also have plenty of cotton balls around to wipe your ass with, which of course, is a good thing if you don't have toilet paper  :grin: Hope I didn't offend anyone. Maybe I've been living on the farm for too long :wink:
