Standing water becoming gel like

Ive been trying to tilt my monotub, which is fully colonized, to disperse some standing water but there is one particular dime sized puddle that seems almost gel like and wont move. No matter how far I tilt the tub it just stays in place.
Its not clear but not very dirty either and slightly off colored, I'd take a picture but have no camera.
Is this a problem or should I leave it alone?

If it is indeed water...
Just get a paper towel and gently dry the surface of your substrate, say dabbing at it with a folded up edge.

Although, a paper towel could introduce new contams.
If you want to be as sterile as possible, flame sterilize a needle of a syringe and use it to suck up the excess water. If you aren't too worried about the possibility of contamination, then dabbing the excess water with a paper towel will suffice.

Introduce contaminates to an already fully colonized substrate? Unless you have in someway already damaged the top of your substrate I highly doubt it would become contaminated.
Further more, if your substrate is already in fruiting conditions. Then odds are there are already many bacteria/mold spores lingering around. It will hurt nothing to use a paper towel to absorb excess water.

If I just left it alone would it make a difference?
Two or three pins have appeared, I dont know if its still too early to open the tub though.
While tilting the tub I was surprised at just how much water is actually inside of it. I guess it all just gets dispersed evenly under the garbage bag liner the mycelium sits on.

I've noticed something like what you're describing. In my experience, it's fluffy aerial mycelium that becomes wet and holds the water like a sponge. Looks really 'gel' like. First time I saw it I thought it was a bacterial contam, but I am certain now that it is (and was) not.

So I checked out the tub today. Noticed some light yellowing towards the side of the tub I was working on, no deep puddles of metabolites but I take that any yellowing isnt a good thing.
Are metabolites an indefinite sign of infection?

No the myc releases metabolites as it digests its food/ and or when the myc gets hot it sweats. Metabolites are nothing to worry about and are totally normal as long as you have no sour funky smell in your tub. If it smells shroomy your all good. Yellow, brown, rust these are metabolite colors and will show up on surface and sides of tub.
If things turn any other color (black, green, red) then your in trouble.
