Get the 1mm. For cakes smaller is better. And if you grind you rice up try and grind it to the same approx. size. It will give you a more "airy" substrate and help speed up mycelial growth.

I just did an experiment with vermiculite size and i found that the smaller the vermiculite was the slower colonization occurred, especially if packed in tight. The medium sized vermicule (which i guess to be about 2 mm) did a much better job of providing airspace when not packed.
