pressure cooked jars, redo?

a dude p.c.'ed some jars about 3 days ago, he let em cool, shook em, but let them sit until now, im wondering, should he completlely redo them, or could he just pc again for a little longer?  i dont know if hed screw up the water content or not? any advice is greatly appreciated.  thanks from myself and the dude.  :tongue:

i dunno, would it? would water content be afected, maybe just like 15, 20 minutes more? whatcha think?

How were they protected for the three days? If you are confident they were protected well, running them through the PC again wouldn't be necessary.

If you are concerned the water content will be off, it was off before you started. If they dried out in three days, they would not have enough moisture to maintain the innoculation which could take a couple weeks.

It sounds as if you are just second guessing yourself.

In the future, if you must leave sterile jars unused for a length of time, make sure the lids are tight and place non-porous tape over the holes.

I place aluminum tape over the holes while the jars are still hot. As they cool, it creates a vacuum inside the jar. This vacuum protects them from drying and contamination. Assuming you have a tight seal, they will last indefinately.

sweeet, i feel better now, they were actually sitting in the pc with two filters and aluminum foil, the top wasn't sealed, but was on unsealed. Im sure they're fine. we have a good vaccum cleaner that works wonders cleaning the air so .. . i wont worry. thanks for the moral support ainasko, i dont know where wed be without you .. . and the shroomery .. . and anno .. . and the rest of the family. you guys are the man.

3 days is nothing. ive left some for over a year. how long do you think jars are sitting in supermarkets before you use them?
