Agrocybe Aegerita - 20 bags project

Hi,
Here is my first Agrocybe Aegerita project. I made 20 spawn bags with using the following recipe:
per bag: rye grains spawn, 700 to 750ml (with the exeption of two bags @ around 350ml of spawn) 454 gr. Mixed sawdust (mostly aged fine hardwood sawdust). 6 gr Apple woodchips (dry weight) 20gr Mixed hardwood barks chips (dry weight) 75 gr Wheat bran 15 gr Gypsum 20 gr Wheat Straw, chopped 12 gr Dry spent coffee grinds 500ml of water (finally it's been a bit too much, that's why I added a bit of dry verm) 140 ml Dry vermiculite
Pressure cooked @ 14 psi for 1,5 hour
*Notes: - Everything it dry weight exept the sawdust which was a very little bit humid. - I would have putted a bit more gypsum but that all I haved a this moment. - The wheat straw has been soaked for 8 hours, excess water was drained after that. - The woodchips and barks were soaked in warm water for around 45 minutes. (hydrated ok, pieces were small enough)
Growlog:
July 27, 2012: Inoculating the las 3 bags with the two remaining rye spawn jars. The bags made last week seems fully colonized.
April 15 2012: All bags (exept 4, waiting for small pins) are in the tubs. They seems to generate their own humidity without any problem. They seems to pins better if you let them pins in the bags before stripping it. They do a little bit of side pinning, but not much. Strain is from sporeworks.
The first almost mature mushroom of all. It was a "very old" pin growing in the bag, then I stripped it and cased. (most probabably cased too late)
April 16 2012: Yield of the first flush of the fastest block. 174 gr. Fresh agrocybe Aegerita. Honestly I was expecting more. On my side I should invest in a better lightning system. Maybe it will help a little. Also, I hope the block that were cased right after I saw invitro pins will perform better. Time will tell.

I'm still wondering if I'm going to wait for invitro pins before I strip the bags or not. I plan to case all the bags and put them side by side in 2 or 3 clear plastic tubs (with holes for FAE) *monotub style*

Update:
I opened two bags that were fully colonized for around 7 days. I gave them a bit of air then I closed the bags. I will give them fresh air a few times this week to see if they will pins with very few fae (and how good). I cased one of the two bags with pasteurized 50/50+ casing mix.
Meanwhile, I think my pasteurized straw (inoculated with rye spawn) is starting to pins. If it's not pins its fly eggs...... These nasty seems to love the Agrocybe Aegerita. I really don't know were they come from but they found the project right away.

I confirm that they pinned, it's not fly eggs lol
Killed the flies in sight. I think i got them.

I stripped the first 7 bags
The half colonized casing and the one whitout casing were opened a few days ago. All the other ones have been opened and cased today.
For this batch I will have very low FAE to see how they perform with minimum manual fanning and misting. Also, I only made two medium holes covered with synthetic pillow stuffing. I don't want any flies to go in that tub.

The cased straw batch is also pinning everywhere it has space (this include a lot of side pinning). We should see some mature mushroom with this one in a couple of days.

This project is still on it's way. The straw casing don't produce a lot for the moment, I might try this one again but with pasteurized sawdust mixed with the straw. Mushrooms are small.
The 7 bag "monotub" works well, the casing colonize but no pins yet.

From the cased straw monotub: I ate my first Black Poplar mushroom yesterday. Haversted before the veil break.
It was a solid mushroom. The stem is like the King Eryngii but not fibrous (which is good!) The cap was really small a this point.
The taste wasn't particular, but it was a good taste. It was like meat but maybe it wasn't cook enough to taste like bacon. More info on the taste coming.
Sorry no pic. Bulbous stem, small cap. Really looks like a bolet with a ps. cyan weavy cap.

A few substrate blocks are pinning and browning a little bit. The mycelium colonized the casing A LOT, there is almost no casing left. This makes me think I cased (and birthed) them too early.
The mushrooms are forming on the edge of the bags and on the small chunk of the remaining uncolonized casing.
Here is a RR quote:
"Let them form pimordia in the bag, but then strip it off and place the casing layer over them at that time. If you wait for 2" fruits, it's already too late. We often move the fully colonized bags into the grow room so they get a few days of bright light before tearing the top of the bag off and applying casing. This light exposure to the naked substrate almost always generates primordia, which are then cased. I found this works better than applying the casing either earlier or later. Alright I will update at the end, seems logic.
I'm interested in investing in a better strain. Do you have a suggestion? I love the bulbous stem, if there is any good pinner that have this caracteristic.

I sort of settled on the Jordan strain when I was going to grow these commercially, which I eventually decided against doing. It's one of Solomon Wasser's clones from a wild middle-east specimen found in Jordan. It tends to produce a full canopy of meaty fruits. We also experimented with reducing substrate size to half from what you see below and it made little difference in the size or amount of fruits.
The larger substrate may deliver more flushes, but I'm a proponent of getting as much product in the first two flushes as possible and then replace the block with a fresh one to maximize production weight per square feet/month. RR

Update!
First the pictures of two of the best bags:
Now the numbers:
Yields (first flush, fresh weight) 1: 174 gr 2: 179 gr 3: 223,5 gr 4: 96,5 gr (half of the first flush) 5: 205 gr 6: 160 gr 7: 118 gr 8: 224 gr 9: 100 gr 10: 248 gr 11: 280 gr
Average: 182 gr per block (for the first flush
Notes: Most of the blocks pinned ok, there were no "wall to wall" pinset. It was more like groups of pins here and there.
Fruits in general were very good, firm with meaty (but delicious) stems.
I got a too large number of abord... Not young mushrooms, but sometimes half of the flush stopped maturing when the veil was about to seperate from the cap. There is a small chance that this is caused by the manipulation of the block for bugs inspection and harvesting.
I got a bit of mutation, but the fruits were still very good.

I had some mutation too when I put coffee grounds in the substrate, may it be the cause of mutation?
