Calling all who have 12 qt pressure cookers

Well a pressure coooker was brought off ebay. And of course, with the luck some have, the pressure gauge was broken. Steam comes out after about ten minutes but i have no idea how much psi that means it's at.

i can't throw another forty out right now for another one so i was hoping someone who has a 12 qt could approximate how long it takes to get to 15 psi with an approximate amount of jars. i know they vary across the spectrum, but hopefully if someone has some idea i can gauge off of that and go through this batch without having to delve into precious savings.

First of all be careful because if they get too hat they can expolde. The pot can handle only so much pressure of course.
With the guage working I would heat on high until I reached the right PSI and then turn the stove down to just below 4. All stoves heat differently but 3 1/2 to 4 should probably be the right setting oncew iis up to temp. Based on the link Anno gave you, I would put it on high until a drop of water on the lid boiled from underneath and then set it to 3 1/2 to 4 .
20 min. from there and all should be sterile. It is absolutly imperative that you stay with it the whole time. Pressure cookers ARE dangerous if left unattended. Good luck to you.

BTW don't knock ebay. It sucks you had a bad experience but all of mine have been great.

When I was a little kid, my mom was cooking something on a pressure cooker. I remember it was old and my mom kept a close eye on it. My older sister told me that there was a real possibility that it might explode; I asked her how big the explosion would be, she said it could take out the whole house. I got scared and ran outside, and she came and laughed at me cause she scared me. How mean! hehe....

The point is, be careful, they could potentially explode and take out your whole building, if it's a big one then maybe a whole city block!!
