Steaming the jars at low flame for one hour should work fine.Have you tried lowering the amount of water you use in your substrate mix? Also, you can still fruit those cakes that have yellowed in places. They are not rendered completely useless from a little water damage. Just case them and cut out the damaged parts. Have you been throwing them away?

Yellow spots is definately not a bad thing. I've had about half of my jars with yellow spots one time and cased them anyway, and they fruited just as well as the cakes with no spots. It's not contams.

yeah, it's water but I don't think it's contam. baldy had a good suggestion, or maybe it's water gettin in from the steaming. I use the tape over the holes and a couple peices of foil. and make sure your flame is down low after you bring it to a boil. works everytime for me,good luck!
