Kebab's not to be confused with Shish-kabob (on a stick)
looks sort of like this

some friends are coming over sometime and im interested in making these. now i dont eat meat and they only eat chicken, so can this be done with chicken? to me it always looks more like some sort of lamb meat or like gyro meat  and what kind of bread is that ? can anyone explain this to me ? they seem to be more popular oversea's
anyone have a good Recipe ?

Dont have any good recipes but if you dont like lamb, chicken is the next best way to go

YES.... Use a good yougurt sauce, lots of good veggies and pita read. Poach some thin sliced chicken in vegetable broth and serve..
Please dont make this without Alphalpha Sprouts..
Whatever happened to Alphalpna Sprouts? I miss them!

You offend me and the lebanes/turkish/ethnic people what make this.
First of all, you need donner (spinning) meat. Kebab is any small, bite sized pieces of meat. Use lamb, and find out what spices and herbs are used in eastern Mediterranean meat.
The meat must be roasted. This is why the kebab I feel is so welcome in England, it is one of the few places you can still get roasted lamb.
Make a salad of lettuce, parsley and tomatoes, or just parsley and tomatoes. Other vegetables can be used, but don't.
Put into pitta bread, ontop of naan, or in unleavened bread as a wrap with the salad.
Serve with chilli sauce and garlic sauce.
Have a bunch of arab teenagers chatting in jibber jabber with the chef as you await your greasy delicious lamb fare.
DON'T USE CHICKEN.

Every kebab house I've ever been to in the UK does chicken kebabs...
Marinade chicken pieces in turmeric, coriander leaf, cumin, chilli powder etc (any mid eastern spices are fine.) This meat is always cooked on a skewer though, just not served on one, so it's kinda a shish-kebab.
If you have a few hours, yoghurt in the marinade in good too, makes the chicken very tender, though that is slightly more Indian/SE Asian TBH.
Def nice with chicken! Grill it and get some good black colour if you can, texture is a key part, meat should be cooked very fast at a high temp. 
I agree 100% with the salad ideas of Visionary.

you can buy or make this, lamb and beef is the typical mix used in today's meat, usually around 50%-70% lamb in addition to the herbs/spices used, you more or less just make a series of large patties and skewer them on a rotisserie, pack it nice and tight in plastic wrap and let it set in the fridge over night

you can make it like a meatloaf since most dont have a rotisserie, once cooked you can slice it thin and sear it it before putting the kebabs together. I was shocked to discover the meats used were actually of really good quality from most makers such as Kronos, I got to visit them when I went to chicago with a friend of mine
to give you an idea on how it's done

it has to be chicken, thats the only meat they will eat im not eating them, just making them. i am a good cook
