To borrow a phrase from Rachel Ray - "stoup" - here be what happened when I happened upon
some fine looking oxtail at the local market... and cherry picked ideas from various stew & soup
recipes, ultimately settling somewhere inbetween after a sixteen hour marathon crock pot session!






           

(don't mind the aphids on the oregano, it was picked from my yard and did get cleaned)

Ingredients:
  • 2 lbs oxtail
  • Small bunch of fresh carrots
  • 3 large celery stalks
  • 1 medium/large onion
  • 2 small sweet potatoes
  • 1 medium yam
  • Bunch of leeks
  • 1 - 2 Jalapeno Peppers
  • 1 can diced tomatoes
  • 5 large cloves of garlic
  • Red Wine
  • Barley
  • Corn
  • Sage, Rosemary, Oregano, Bay, Salt & Pepper
  • Additional stock and/or water


Don't fret if you don't have all this stuff.  The beauty of a crock pot meal is that you can pretty
much throw whatever you got in there and it'll probably come out at last half way decent!  As a
simplified version, I would suggest using the oxtail, onion, celery, carrots, some sort of potato,
garlic, wine and misc spices.  The variety of potatoes, leeks, jalapenos, corn, barley and tomato
are great, but you can still make delicious soupy goodness without 'em.


   

To begin, we lightly flour and spice our oxtail, then brown the sides in a
hot oiled pan in order to create added depth of flavor in the final stoup.


   

Once the meat is nice and brown, remove it from the pan and begin sweating your onions, celery,
jalapenos and garlic.  When these are ready, throw your fresh chopped spices in there (I used ~2
tbsp chopped fresh sage/rosemary/oregano).  Then add some wine to scrape up any goodies that
got stuck to the bottom of the pan.


   

Dump the meat and your sauteed veggies/wine gravy into the
crock pot on top of your leeks and potatoes.


   

Add some diced tomatoes.


   

Add 1/4 - 1/2 cup barley and a few bay leaves.  You also want to add 1 - 2 cups of red wine at this
point, and water or stock so that all the ingredients are just barely covered in liquid.  Add a pinch
of salt for good measure, set your crock pot to low and let 'er rip for a minimum of 8 hours, and
from there the sky is the limit!


   

When you've had enough of the waiting game, skim the heavy fat layer off the top of the stoup.  If
you catch some soup here, no big deal, just place what you skim into a relatively narrow/tall
container and let cool in the fridge, then you can easily peel the hardened fat off the top and throw
the remaining good stuff back into the crock pot.


   

The meat should be falling off the bones and the sauce should have a respectable level of heat. 
Note that if you don't like it spicy, just ditch the jalapenos and throw a few peppercorns in instead.


   

Serve over rice, with some crusty bread or risotto, or just eat it straight up all soup like.  If you
haven't experienced oxtail for yourself, you'll be in for a treat, as these globules of meat chunk off
the tail bone with just the right amount of deliciously moist and tender gelatinous matter that will
melt in your mouth.

You cant get a sheen on vegetables like that without some good slow cooked fat layerd over them..

Yum. Oxtail is one of the great soup bases far too often ignored in the modern world. I haven't seen one like that since my Gran died.
Thanks for reminding me.
Lamb shanks are another one btw which are cheap and make a delicious soup.

This was a quite tasty stoup.  I had the privilege of enjoying a bowl the other night, and afterwards my mouth tasted like delicious fat.
