is it ok if i wait up to 7 days before inncoulating if i have the jars already mixed together 7 days before

it depends on whether you poked holes in the lids first or are waiting til you innoculate. if no holes were poked and they were pressure cooked then the jars are sealed. but i dont know if you already poked holes or not. by the way i am a newbie but i have been around pressure cookers all my life.

I usually PC several cases at a time knowing they won't be used for weeks to months away.

I place aluminum tape over the holes as they are still hot. As they cool it creates a vacuum. If your sterilization was successful, they will last indefinately.

Use caution when removing the tape for innoculation and be certain it is done in a clean work area. Again, they will be under a vacuum. Removing the tape will cause the jars to suck in air and possible contaminants.

Almost

If you keep the jars in a warm place they might dry out....with time.

Not if the vacuum holds. If there is a vacuum, there is a true seal.

i dont know how relevent this is to this thread, but i have been down to my grandmas and found jars of green beans in her basement that had to be over 10 years old and were covered in dirt but the seals were still good. just out of curiousity i opened one it made the famaliar vacuum breech sound, and was not spoiled. like i said may not be the same but i would figure same principle.

That's odd.  We have cases of jars that were autoclaved and dated almost a year ago that still remained moist and produced vigourous growth.  This has worked well for BRF,  WBS and any other grain imaginable without issue.

Are you using jars with pressure caps that you can push to test for vacuum?  If the seal held well there would be no opportunity for air or moisture to escape.  It's likely that you did not have a secure vacuum seal.

If you are using a pc, they should be fine. If you just boiled them in a pot, then you are asking for contams. Boiling them in a pot is rarely 100% sterile, so it is better to inocluate them right away so that the mycelium can get a foothold. My friend used to do pf jars without a pc, and they always contaminated if it took too long for them to colonize.
