shrinking pf cakes

my neighbor's pet rabbit told me this fable:

once a midget had six half pint pf cakes in incubation.  the cakes were colonized from 80-95%, steady rate, no contams noted. the cakes are B+, on day 17, incubated from 80-85 degrees F.

on day 10 the midget flipped the cakes and notices within a couple of days that the cakes shrunk.  the lil guy hasn't seen any contams yet, but sees an awful lot of condensation and is concerned if that is bad.

some of the cakes are getting some gnarly knots on them...

what should the midget do?? :confused:

The condensation is bad. Shrinking just means that the mycelium is using up the water in the cake as well as the substrate (which is normal). I would have the midget lower the humidity so that no condensation occurs and he should be ok. The "knots" sound fine, just make sure the cakes never look actively wet.

shrinkage is normal though we all hate it :wink: :grin:
but thats why the cakes come out of the jars so easily cause they shrink some when fully colonized :smile:
no worries it's normal...

Also, don't worry too much about condensation. Of course, a large puddle of water somewhere in your jar isn't very good, but some drops of water here and there are normal.
