I wouldn't wait longer than a few days.

Its not a good idea to leave them sitting around, but if they are sterilized properly, you can get away with letting them wait a little while.

I recently inoculated some rye bags that I let sit for nearly a month and a half and they did just fine, not recommended, but I did get away with it.

I've let them sit as much as a week with no perceptible ill effects.

Yeah the longer you wait the higher the chances of getting a contam. You can get away with it but I don't see the point in risking it.

The rate at which your grain will dry depends upon the material you
have used as a filter.

I find with filter discs you can easily let grain sit for 1-1.5 months
without much moisture lose(although there 100% is some). Polyfil and
tyvek I find tend to allow the grain to lose moisture a little faster,
I would not leave jars for much longer then 2-3 weeks with these
materials. Bags I find also tend to dry out quicker due to the larger
surface area of exposed grain in the plenum of the bag.

If you have sterilized your jars correctly you should not see any contamination
at any point, even if you leave them for a few weeks.

If your grain dries up a fair bit you can compensate by adding a bit
of extra LC when you inoculate them.

All this being said ideally you want to go ahead and make grain and
use it within a day or two for the best results. Sometimes shit happens,
and in my case with a busy work schedule and life I tend to make grain
ahead of time on my days off, and inoculate later at my leisure.
