Either one will work well, theres a split on what works best, seems more people like the malt better, but you'd have to poll to know for sure.
Your supply list is lacking one essential ingredient.. The Agar itself.

It depends if the (P)otato starch is purchased from a vendor or homemade. I found the homemade stuff always came out abit "grainy" making it hard to spot trich. But it performed well with cloning and isolation.
I say go with MEA, I read about it more often from the guru's.

I use malt, but that's partly because I got a lifetime supply for about five bucks. I've never done side-by-side comparisons, every type of agar I've ever made or used worked just fine.

Well I wouldn't use dextrose with malt, just malt, agar, and water. Look up FastFred's Media Cookbook, it's got a zillion recipes. Roger Rabbit likely talks about it in his vids too, it's been a while since I've watched them.
I seem to remember that it's 30g malt, 20g agar to a liter of water but I'd have to go look it up to say for sure. Use less agar if you are stating spores, the dishes will be softer and juicier. EvilMushroom666 (I think it was him) did some comparisons, you should see if the search engine can find the thread for you.
Edit- oh, and noobieshroomie did some work with food coloring, and I think he talks about recipes as well. Even if not, the food color/agar thread is a fun read and well worth searching for.

Why would you want dextrose if you have maltose? Stop and think about what's going on, don't just add things because you have them.

Malt extract is primarily maltose, with some other flavors and impurities.
Dextrose is used with potatoes to make agar solution because potatoes aren't sweet, they are starchy. When you malt grains, the starches convert to sugars.
I wanted somebody to go research this and post the answer, rather than waiting to be told the answer.
Ok, I'm telling you this now: follow a standard agar recipe from FastFred's Media Cookbook. Find, it, use it, post it.
