Did you try the steam dry? Takes like 10 minutes or so?

I've used WBS before that was a little on the moist side. Always seems to me that the moisture gets reabsorbed or evaporates because a few days after I'd inoculate the jars, the grain would look fairly dry from the outside and the mycelium colonizes it just fine.

I lay down a clean bath towel on the counter and pour the colander of rye onto it. Just moving it around a few times on the bath towel gets it nice and dry. I've never had a rye jar contam. It LOOKS dry, like even too dry, but never seems to be.

After your soak, rinse the grains. Boil water in a pot. Pour the grains into the boiling water, and remove from heat. Let sit for a minute or two, then dump everything into your strainer. The steam from the water will dry your grains. Just stir them around a few times, pulling the grains from the bottom to the top. They will be dry in around ten minutes.

thats what i normaly do but i dont do the the 12hr soak
i boil water then drop grains in and let it sit for an hour or two then i will bring to a boil again then strain and dry
but stupid me didnt turn the stove off the whole way and got about 20% busted so i didnt boil it before i strained
stupid mistake on my behalf

no soak no simmer is much more simple and time efficient.
