jars in pressurecooker.how long can you leave them in there?

i was wondering when i do my pressure cooker sterilizations of bfr jars i know i leave them in there to cool for up to 12 hours but can you leave them in there for say, two days, will the jars still be sterile?.... and also scince my PC can only hold 3 jars at a time where could i store the sterilized jars before inoculation...?

after sterilization, i would inoculate my jars within two weeks but normally i plan my schedule around my mushies and always knock them up as soon as possible. YOu could store them in a box sprayed down with lysol and put them in a dark closet or under your bed.

In theory, a sterile environment should stay sterile. But when it comes to standing water I avoid leaving anything to long. As long as your BRF jars were prepared properly, IME, you can just leave them on a shelf till your ready to use them, as long as it's within a day or 2.

If Pressure Cooked (not using the steam bath in a pot method), the jars should be good for a week or two. After that, I wouldn't use them.
Store them in your clean room, on a shelf or in a tote. Do not put them under your bed where millions of contams love to be. The first 2' off your floor is where most contams are.
Once the PC has reach atmospheric pressure, then the air inside the PC is no longer sterile. The toggle valve allows for air to pass in & out of the PC once it's at room temp. If you were using a sterilizer, then the air inside it would still be sterile, because they allow no AE.
