Monotub Advice

Recently started working with monotubs.
First two got hit with mean green. I blame the contamination on the fact that I used coffee/coir/Verm mixture without proper pasteurization.
Now I'm on my third tub (pasteurized substrate this time).
It colonized in 5 days and 3 days after that I put it into fruiting. It has now been 5 days into fruiting with no real change (no pins,primordia or knots).
Whenever I fan I can smell a slightly sour smell, like co2. After fanning it smells fine (like myc). Should I be patient and wait it out or toss it?
It was created with 6qt of LC golden teacher. The spawn jars looked very healthy and smelled like fresh mushrooms before they were mixed with the substrate. For this reason I doubt that my spawn was contaminated from the start.

I'm no expert but TL says to wait till you see pins before putting your mono into fruiting which is typically around 10 days. Post some pics you'll get help for sure

5 days is too early for pins in a lot of cases. You got extremely lucky with your mono colonizing in 5 days.
I have to say that I am concerned with this slightly sour smell. Thats a sign of bacteria contamination. It should smell like mushies at all times. I wouldnt be surprised if you never see fruits with this tub.

For god sake, at least wait till you see contams to give up on it.
Is your humidity and FAE right? Any ultrasonic humidifier can fix both those problems.

I'm pretty certain I can tell you that your tub didn't colonize in five days. You either fruited them much too early, or the growth you saw was not healthy mycelial growth. I generally let my tubs colonize a full two weeks even after they appear to be done, and even then in some cases it takes up to a week to see any serious knotting or primordia formation. In any case, pics would help.

Fruited too early? Def. the reason this was done is because I'm about to move out (5days) and was just go ahead and giving it a go so I would have to travel with it.
The tub looked colonized and pretty healthy when I started the fruiting. When I pulled back a bit of the garbage bag around the sub it was colonized to the very bottom on all sides. I wasn't able to check the bottom of the sub tho.
I also hit the tub with 3% peroxide just in case it was cobweb and didn't witness a reaction or change in the growth.
I would like to upload pictures but cannot do it from my iPhone and i understand that using a third party (photobucket..etc) is a no no.
