If anything, I'm a bit worried that I'll end up letting them colonize too long. What are the risks of leaving a jar to colonize longer than needed?

I wouldn't shake them at this point they look like they will colonize the rest of the way fairly quickly and evenly. A week at least if not two.

OP, how confident are you with prepping your grain? Because I had a very slow colonizing jar without any signs of contam. I think it was because my grains were too dry. It lost momentum colonizing the entire jar like yours. It looked almost there but I checked every other day and it seemed to just stall. I gave it a shake to distribute some mycellium to the bottom(everything was colonized except a small bottom portion). When the mycellium came back it finished the bottom. That is why I suggested a shake and see what happens in a week or so. A shake can also help if you have a contam but can't see it and the contam is keeping the mycellium from fully taking the whole jar. So if you shake and it still doesn't completely take over the whole jar it can indicate something is wrong. Shake or wait either way only time will tell. Keep an eye on it and be patient.

I totally agree man. I couldn't really see anything myself, that's why I suggested maybe a bacterial problem due to the length of time it's taking but by what op said it sounds like a month is about the norm for him.

I just gave my jars a shake and they didn't come back (well soo slowly that it was obvious they had a contam (bacterial with mold embedded)).

Yup, I'll get on those pics tomorrow. Even with proper lighting, I can't promise they'll be much clearer though... my camera just sucks.
I actually started with 10 jars. 5 I had to toss because they were severely stalled, meaning they were only 30% after 5 weeks. They clearly smelt funky.
The jars that failed were prepped separately from the jars I'm showing you all.
My grain prep was a bit of a hassle. I had a great deal of trouble passing the hand/spoon test. For the batch that failed, I actually set the WBS in the oven at 250f for a few minutes at a time.
The WBS used for the other jars I simply let dry for 4 hours, plus I used napkins to soak up some of the moisture.
It wasn't what I'd call a smooth process, but it was my second time ever prepping grain, and for some reason I was having great difficultly with the drying process.

are you steam drying the wbs or are you rinsing with cold water before letting them drip dry/air dry?

Okay, so I tried to take some clearer pictures this time. I know they're still not perfect, but it's the best I could do. My apartment is very well lit. I had to position my lamp correctly to avoid causing too much glare. You can still make out the jars pretty well. I noticed that another reason some of you may have thought that there was grey in my jars is because of the reddish color of the milo showing through the mycelium. Also, as you can see there is still some millet on the sides of the jars that hasn't fully colonized. It appears to only be a problem on the very outside of the cakes. I tried to take pictures of the most concerning sides of the jars, that is with the most uncolonized millet.
How do these look?

The ones you show in the pic definitely not finished. All are showing various areas of uncolonized seed. Wait a few days to a week. Or shake the ones that show the most uncolonized seeds, and see if they will bounce back.

Well, I don't know if shaking would help 
It's all just one big cake of mycelium now, so I don't see how it would make much of a difference. Plus, I don't want to beat it up too much.
If I'm wrong, let me know.
I guess I'll wait another week :/ It's strange how long this always takes for me.

When my jars were about 80-90% and started slowing down I gave it a shake, so that is why I'm suggesting that. And when colonized they will be hard to break apart but it can be done with some good knocking on phone books or a inflated bicycle tire. I just used my palm, bruised myself a bit from shaking so many jars using just my hands but I don't care about that lol. Now one palm is stronger than the other. I created a new art of "Iron Palm" HAHAHA. If after a week they still don't completely finish I don't see any harm in shaking to see if it can finish up. If it doesn't then you know there is some sort of contam that is stopping it.

You will not hurt it, shaking just exposes different areas and can allow mycelium to reach it easier.

It's the lighting and also the red milo showing through the mycelium. As you can see, the WBS is not flush on the sides of the jar, causing dents that cast shadow.
Once again sorry about the lighting, it's the best I could do.
The mycelium itself is a clean white.

Okay guys, so it's been six weeks. The jars still look healthy, and seem to have grown just a little since my last post. However, there is still some millet that appears to be uncolonized on the outside. It does, however, appear to be colonized on the INSIDE. Also, it looks as though it's slowly being consumed by the mycelium
Still, 6 weeks is a long time. I've never had to wait a full 6 weeks, usually just 5 1/2. I don't want to wait too much longer, as I fear leaving them for too long could mess them up somehow.
How much longer should I wait until birthing these guys?
Is there really such a huge risk in using cakes that have a little millet on the outside that is not fully colonized? It's not much at all. Hell, I could probably brush the loose bits off. So what's the harm of doing this, having a few stray millets in my substrate?
