How important is temperature when dunking?

I've decided to dunk a few of my cakes. How important is it to keep the temperature cool? The dunk tek that this site links to states that it should be as cold as possible while still above freezing. I would like to keep it out of my refrigerator if possible. I would dunk for 8 hours at a little cooler than room temperature, around 65 degrees.

If it's imperative that I cold dunk, I could, but really, really want to stay away from using my frigerator, for security reasons.

dont do that. the ice could possible kill the mycelium if it touched it. its not that important to dunk them at really cold temperatures. It just helps tell them its ready to pin, if you have good light/humidity/temp you wont have any trouble with pinning. assuming your strain is an easy pinner.

Many would agree that a minimum of 12 hours would be needed for a proper dunk.

It is not ncessary to keep temps down during the dunk process, but it does deter contamination and offers the opportunity of a beneficial cold shock.

I'm working with B+ cubensis, which seems to pin easily. I was mainly concerned with room temperature water "suffocating" or having other adverse effects on the cakes. I'm going to dunk my harvested cakes tonight. Thanks for the replies.

A tapwater temperature dunk is fine. Cold shocking is unnecessary for cubensis.
