I have read the FAQ and various sites on gourmet mushroom cultivation. Is it a true assumption that all gourmet strains should be able to grow off of saw dust? And is pasteurization as simple as pouring boiling water on it and letting it sit for about an hour then drain?
Not all gourmet species can be fruited off sawdust. For example button mushrooms & shaggy manes are usually grown on compost and pasteurized straw is preferred substrate for oysters. Straw and compost can be just pasteurized and sawdust needs proper sterilization.
