Meripilus sumstinei
    #15975934 - 03/21/12 10:59 AM (11 years, 10 months ago)

Meripilus sumstinei

so.. rooster of the woods not hen.

any one know of health benefits. personally i had a regiment of them and reshi while i had mono and cured me up right quick. in which Meripilus sumstinei became a staple of my diet well matured ones are so damn tasty any input from other eaters of them.

personally i like freezing them then thawing em for use this makes them way softer and easy to eat

one site says

"this mushroom when it’s very young and tender before it becomes leathery. You should be able to pinch through the flesh with your fingernail. Its texture and flavor are like steak, especially with the same seasonings used on steak. You can sauté it in oil, but simmer it in a sauce or soup for 20 minutes afterward to completely tenderize it."

i would totally say its better then steak and takes the spices better as well tho , it taste more like some kinda bird and as i said freezing tenderizes it

sounds pretty good to me. I'm not sure of medicinal values tho. You may want to try a search on google or check wiki.

Maybe you start looking into the health benefits of Meripilus giganteus, which should be almost identical.

m. sumstinei used to be m. gigantea I can't say much about the medicinal value, but I've ate them a few times, and find them to be pretty good I made thread last year called, "philly-cheese polypore" they make a pretty decent philly-cheese

I like the younger ones sauteed. I like the older ones added to soups and sauces in small quanities, they get a bit astringent for me as they get older, but good when you use a little.
