okay so, you want to make beef jerky for cheap? this is how.
Get a dehydrator and throw that shit on there.
OR
If you don't have a dehydrator you can put toothpicks through the beef strips and hang them from the top rack on your oven on low with the door cracked open a bit. You might want to put some tin foil on the bottom for drips.
Go buy the cheapest roast or blade steak etc. on sale at the grocery store. The cheap stuff is even sometimes better for jerky IMO.
sit down to a TV show or whatever and cut the beef up with a sharp knife, thinner strips dry faster if you're really hungry.
Once it's cut up you're going to want to marinade it for at least 2 hours, overnight is the best, but 2 hours works if you're hungry like me.
An easy good marinade is if you buy that Chinese black pepper sauce from the store. It's a bit expensive so i prefer to buy the ingredients bulk and experiment.
I like black pepper, sugar, garlic salt, and some Chile flakes.
You can experiment with all kinds of stuff and that's half the fun.
Throw the strips in the oven/dehydrator and leave it for a few hours.
Keep in mind that the jerky will air dry after you take it out of the oven unless you seal it, so if you're going to store some a little on the wet side is better unless you like it crunchy dry.

seriously.. beef jerky is the bomb unless you're at a vegan convention, in which case... VEGGIE CHIPS!

Nom Nom Nom indeed, my first foray into jerky making was a couple months ago and it was certainly much tastier than its store bought brethern. I started with the presliced carne asada at my local carniceria (3$ something a pound) we then proceeded to just marinate the fuck out of it pretty much using everything in the spice cabinet, i was a little skeptical at first but it turned out pretty awesome. It also surprised me it didn't take long to dehydrate at all and it made the house smell amazing anyone that even thinks about making there own jerky its highly recommended get creative with your marinades it might surprise you, oh and dont forget to write it down/

I've got a friend that uses ground turkey instead of beef. Much cheaper, and he claims that you can't tell the difference after the spices are added and the dehydrator has done its job.

Home made jerky is infinitely better than anything store bought.
Some things to keep in mind:
I freeze the meat for little bit before slicing, it makes it that much easier to slice thinly.
I usually cut with the grain because I like my jerky tough. Cutting against the grain will give a more tender jerky.
For marinade I use teriyaki, soy, worchestshire (sp???), onion powder, garlic powder, liquid smoke, black pepper, red pepper, and that might be it, now I can't remember

I make a lot of venison jerkey, I've used the oven method only I used a wire rack instead of the toothpicks, I guess I make enough of it that I ended up buying 2 of these some years back
my preferred method of making jerky if to use a fire because it adds the smokey flavor without the crappy taste of liquid smoke

Works great and it's good jerkey too! I plan on drying my mushrooms the same way.

after watching that good eats jerky segment, you'll have a hard time convincing me that Alton Brown isnt stalking me, his deydrator is a shroomery special and he did an episode on water that was shot here in my town

I use a ceramic knife that is insanely sharp, I just think it is easier to slice thin if the meat isn't squishy. I have the 5 tray version of that same dehydrator, it works great.

Too cool!Love that guy. He's the "Bill Nye" of food. I've cooked plenty of his recipes and also own the Alton Brown series of the Shun knives. (can you believe they made a set with an angled handle just for him?)

It was mostly because Alton was hitting his knuckles when chopping so they fixed it be angling the handle. Love them, allows you to grip the knife with your whole hand instead of just your fingers, because many times you may want to chop something harder that requires full hand motion including your palm.

do you still use the dehydrator much?
and is there some kind of pictorial on how you would do it over fire?
how important is it to use liquid smoke/or even just to have that smokey flavour?
yes I am becoming creepily obsessed with jerky
