Put all the cakes in a bowl full of water, cover it with saran wrap and put it in the fridge overnight. The pins will start alot quicker for you. They will pin with no cold shock but it will take alot more time and the water in the cakes will be depleted as well as the nutrients. Also the longer they sit there the more chance of contams.

No dont scratch them...... If people are worried about cold shock do what my dawg does. Mix up the casing layer as per coco tek, then throw that bitch in the freezer until you see ice fragments. Dunk, Shock, and case all at the same time.

Yeah I know these were harveted a bit late, work sucks....

Put the cakes in their jars and fill with water and put into fridge.
Your jars will look like these.

My situation: Dunked one of my early colonized jars on tuesday, birthed wednesday, still no pinning and it's friday, I'm hoping by the weekend!
