I've got an old dell desktop that I'm wanting to setup as a FTP.
Currently running XP 32 bit, the PC is only able to utilize 3gigs of RAM.
With Ubuntu could all 4gig be utilized? Or is it more matter of hardware?

Ubuntu and any other Linux platforms tend to run pretty smoothly/efficiently.  Probably even a fresh install of XP could fix your RAM issue though.  A lot of the time it is just a matter of allocation, similar to partitioning a hard drive.

Cool. Do you have much experience with running a server? Would External hard drives be a viable source for extra memory, or would it slow things down considerably?
Also, I actually have two old desktops. Would it be possible to put Ubuntu on both and link them together to somehow share the processing load?

You want to avoid external hard drives on servers, as your access to files will be limited to the speed of your USB connections.  Usually when I have spare desktops lying around, I take them apart and use the best parts to make 1 machine.  You could at least check out jacking the internal hard drive from one to augment the other.  It is a really easy install.

I don't have much experience with the software side of servers though, besides bit torrent.

Sounds like a good idea. I haven't looked at the older Dell, but the one I originally had in mind isn't bad for a server computer. I can get the specs when I'm back home. It's the Dell Dimension 4700 series, but I don't know the specific model.
The other desktop is a fair bit older. I would be surprised if it had any better parts to offer, except maybe more disk space to add.

However, with my current job I get lots of old free RAM that would be thrown away otherwise, so I could put a fair amount of RAM on both computers. From reading, it sounds like HDD space and RAM are the important factors. Would it be more practical to just run both computers as independent servers for seperate purposes? I could always pick up some bigger internal hard drives for both computers.

It could work running them separately, as long as you have some decent bandwidth.  Otherwise, they will be competing too much, not to mention competing with your personal computers.  You want to run 1 good server if at all possible.  You can dedicate it to multiple tasks.:cheers:
