Is it possible for the mycelium on the inside of the cake to die without affecting the outside? My friend birthed some cakes that smelled a little pissy and scratched off the dry verm layer on the bottom, but then, he just kept going into the cake and the mycelium looked dead as he went. As this was done while the cake was submerged in a solution of 10% h2o2 and the brown stuff as sizzling like crazy while the white stuff on the outside was still. Was the h2o2 reacting to the dead mycelium? Is that a good method of deep-scratching on a cake?

Bacteria often bubbles wildly. It is possible that the "brown stuff" was an infection and you cakes are contaminated. If the H2O2 kills the Bacteria then great, if not, better luck next time sport.
