it can sit on the perlite as long as it doesn't have contact with the water, or it'll soak up and die. diluted perlite is not harmful to mycellium.

It is best not to allow the cakes to sit on the perlite, no matter what you add to it. Mature mycelium produces peroxide decomposing enzymes so it can take care of itself in that respect. But your cakes will get waterlogged and more prone to contamination. I use plactic widemouth lids to place my cakes on, but anything will work. Pie pans, even aluminum foil.
