On steam sterilization

Ive heard that you can succesfully steam sterilize whole grain(specifically WBS). The catch is that takes a hell of a lot longer. Like for 1/2 pint jars 2hrs a day for 3 days longer. This gives the bacteria specific to this substrate adequate time to become vulnerable enough to die. Obviously a pressure cooker is the way to go, but suppose one has 3 days of free time before he has the money for a PC. Would this work?

I've used this technique a handful of times but only steamed for maybe 3-4 hrs once and that was it.
Once maybe twice it worked beautifully and all the other times either a few went on to contaminate or they all became contaminated.
I wouldn't doubt multiple steam sessions would be more effective but even still I would imagine you would still run the risk of your jars not being fully sterilized.
I've been in your position where I didn't have the money to buy a PC, so I say if you don't mind losing time and effort and perhaps some spores, give it a go! But be sure to do multiple steam sessions and see what happens. Oh and if you do decide to go ahead with please report back to us and let us know how things end up!

I have read a few posts about using whole grain brown rice. This method would not require the use of vermiculite as the whole grains would provide enough airspace between grains by themselves. And Brown rice, flour or whole grains, does not require pressure cooking. I have never tried the whole grain brown rice method, but it sounds viable.

That method is outdated and prone to failure. You can prepare and jar the grains as shown in Let's Grow Mushrooms and load into quart/liter jars. Steam sterilize for 8 hours in one setting. Keep a second pot of water boiling to use when adding water, because you'll need to do it every half hour or so. RR

I have tried the boiling/tyndallization method, this was before buying my pc, and only had success 2 or 3 jars out of 10+ and this was with 1/2 pint jars. As you can assume this is just not worth it. if you can't afford a pc, do a couple pf runs then buy one.

Absolutely I'll keep it posted. After all that's what this site is for. Actually I found a small pressure cooker. It only holds 5 jars, but I will do 1 with steam and write up a complete tek on how I did it if it is successful.

If you are gonna go as far as writing a TEK on it you should do more than one to ensure it was your method that worked and not luck of the draw.

yeah youre right. besides, why would i write a tek on something that has already been thoroughly tried. Im still doing the one jar but Roger Rabbit definately knows his shit. I would say even if I do get lucky, doing it this way is like russian roulette.

Well... My pressure cooker was missing the regulator so I steamed for 2 hours, waited 2 days, steamed another 2 hours and steamed another 8 hours the next day. Jars are inoculated. I'll check them in a week and let you guys know how they're doing

So here are my best and worst jars side by side about a week and a half after inoculation. These are steam sterilized WBS based cakes. Out of 12 none show any signs of comtam yet (though it was a huge pain in the add). Fingers crossed...

Did you also put vermiculite in there? Are not supposed to use verm when working with whole grains.
