Hi guys
I was PCing for about 30 mins and unfortunately I had to stop. Can I use the same jars again tomorrow afternoon, or are they ruined? I assume I can use them, but thought I would throw the question out there...

Go ahead and PC them again for around 70 minutes. You could do the whole 90 minutes, but that's up to you.

Whats your substrate? If grains then i would toss and start over, no reason to waste time if your not 100% sure. If cakes you can prob. get away with another 45 min pc or so. But if grains, save yourself time and frustration and start over. The reason your supposed to PC for at least 60 minutes is because you need to kill the endospores that germinated. If the internal temperature and pressure of the PC doesnt stay consistent for the recommended time, some of the bacterial endospores may still live and contaminate our jars. If cakes, id say pc for 45 min. If grains start over....

Most pressure cookers are set to a certain psi, it should tell you on the box or in the instruction manual/info pamphlet. Im pretty sure the standard is 15psi, i could be wrong though.

The only reason i wouldnt do this is because ime, preussure cooking for extended periods of time dries the substrate out way too much. I PC my grains at 15 psi for 60 minutes and have a 95% success rate, i leave 5% to chance lol. 90 minutes was way too long for me. But thats just my experience.

it might dry them a bit I guess. I was just prepping a jar of wbs the other day and the next day when ii went to inoculate it, the injection port came off. I put a new lid on it and re pc'd it and it looks fine when I took it out. But we shall see. But in his case I can't imagen an extra 30min making that big of a deal.
Only one way to tell

I have always pc'ed for 90 minutes ever since i bought mine. seems a little excessive but why fix something that isn't broken.... I have yet to get contaminates.
but to add to this thread i have done the exact samething. pc'ed for about 30-45 mins and had to stop. So what I did was pull it off the stove, let it sit in the pc, and about 8-12 hours later when i could resume, i just opened it up real quick added another 2 cups of water and resumed my time from the beginning. No contamination issues at all.
Best of luck
