First time with grain - Soaking rye?

Hi guys,

This is my first attempt at anything that isn't PF-Tek. I'm going with a grain method, I've read a bit of conflicting info. Some teks suggest soaking the grain first to kill endospores, others suggest simmering then putting in PC straight off.

Do you think the latter would be sufficient?

I use RR's rye tek.

Rinse the grains extremely well.
Soak for 18-24 hours w/ gypsum.
Bring to a boil for 5-10 minutes.
Dump in strainer & toss every 1-2 minutes until the exterior is dry.
Load up your jars & place in your PC.
Start the stove to warm up the water in the PC.
Put the lid on w/ out the toggle weight.
Wait until all you have is steam pouring outta the PC.
The pressure may rise about (around 1-2 PSI).
Put on toggle weight & PC at 15PSI for 90-120 minutes.

I am with RR on this.  Soak and simmer.  The 24 hours is very important as that is the incubation time for the endospores.  Some people have soaked for less and had contam probs. And pressure cook for a minimum of 90 mins at 15 psi.  I have heard of people that only PC for 60 mins and still have problems.

It's Both soak and simmer
soak 24 hours, rinse, simmer on low 45 min
p.c for 90 min is good seeing how you might get bacteria
contams at 60 min.
my p.c runs dry of water after 70-80 min.
Because it's small, Only 8 quarts
and it doesn't fit more 1 jar at a time and still
be able to close the lid.
dam I need a new p.c:crazy:

Don't Simmer your grains. BOIL them for 5-10 minutes.
Why make the process longer than it needs to be?

& yea, I agree...you need a new PC :smirk:

So what's the effect of boiling/simmering? Letting endospores germinate? Or do they germinate while soaking?

Boiling allows for your grains to steam dry on the exterior.
All the moisture you need is in the grains.
They germinate while soaking.
