Not to be snarky,but you'd be much better off just drying them and sticking 'em in the freezer-they'll keep better and you won't have to worry about spoilage.

No snarkiness taken. Its just i like this new discovery(for me)
It makes them taste good and sweet.I know it isnt as simple as bone drying them with dessicant and store in bag. Also there is the problem of inaccurate weighing due to honey.thanks for advice.

You could solve the "inacurate wieghing problem" by putting x gm.s of powdered shrooms in X tsp/TBS of honey...

What I would sugjest you do is boil some water in a sauce pan and disolve a good amount of honey into it. Let the honey water cool and soak fresh mushrooms in the solution for as long as desired (a day should do it) the dry as normal with a desicant. With this method you can store you shrooms in the freezer indefintily and still have yummy mushrooms.

thank you both for your help. I agree straight dried is better for preservation of actives. honey makes 'em taste real nice but may make them prone to bacterias.has anyone run into this problem?
