Different types of wheat

Hello all,
I am thinking of trying some wheat for spawn, and am seeing that there is more than one type.
There is "soft white" about which this was stated: =============================================== Soft White Wheat which is lower in protein and higher in carbohydrates than the Hard Wheat varieties and its flour is therefore better suited for pastries, cookies, muffins, cakes, pancakes, and waffles. Soft white wheat is also the choice for sprouting. ===============================================
Then there is the "hard red" wheat: =============================================== Flour from hard red wheat is considered "classic" whole wheat. While other varieties of wheat can be made into "whole wheat flour" this is the flour that gives bread a rich brown color and a nutty wheat flavor. ===============================================
Then there is "Durum" wheat: =============================================== Durum wheat is high in protein, but makes a yellow mealy flour that is used to make pasta. Once durum has been ground into flour it is not called durum flour, but rather semolina flour. In turn, semolina pastas are actually made with the flour of durum wheat. ===============================================
Can anyone suggest which one is better for spawn, and why?

The hard wheat is what is normally used. The hard is better for humans cause its whole wheat. I dont know why its used more for mushrooms

Hard red winter wheat, I've used it a lot in place of rye. But actually I prefer rye, something about the way it smells... Nah, it's that the protein coat is different - my jars would come out too mushy sometimes with wheat.

Hey PS,
I agree. I use primarily rye berries (AzureStandard) but wanted to try wheat for fun.
I went to order some up and find that there are three types offered by Azure.
I suppose that I can get a small bag of each but this is not really worth the drive to the drop point.
