I actually rather like the idea of a large metallic barrel.
/Me ponders how much a large cast iron cauldron and matching big ladle would cost him

I'd rather use a big hot plate with a thermometer hooked to a switch to turn the heater on/off when necessary.

Yeah they last forever and are just perfect for your needs. It will regulate the temps for you according to your settings. The investment will be worth it .

But about your pasteurization, I pasteurize large amounts of straw, about one and a half 5 gallon buckets or 7.5 gallons of straw (completely compacted and shredded fine) at a time plus another 3 or 4 gallons of manure mixed with the straw, FYI 5 gallons is 20 quarts. Heres what i do..
Prep: 1.Turn your water heater up to 150F because if you mix equal amounts 150F and 212F water you get 181F, and when you add your substrate you'll be right at 170F. It takes my water heater about 8 hours+ to get to this temp. 2. Boil 2 3 gallon pots of water, this is usually the standard big ass pot size, i know walmat carries the big blue ones for $20. 3. Buy a large trash can, usually the kind that are meant to go outside or for store use, these are easy to find, usually there about 50 gallons or so. 4. Wrap your trash can with a blanker and duck tape it up to hold the blanket, I duct tape a plastic sheet to the bottom as well. 5. Put 1 cup of lime if your using straw for every 10 gallons or so in the trash can before you dump the water. 6. Mix my shit/straw up into 4 or so 5 gallon buckets 7. dump the straw into 2 pillow case 8. Now just dump the pots into the trash can, and refill them with 150F water from your tap, dump that. boom 180F water. 9. put your substrate in. 10. wait 60-90 minutes 11. I usually put blankets on top of the top as well 12. oh, and i weight my substrate down with a rock
Ive used this method about 7 times now and never had a tub spoil. And I've monitored the temps and it only drops about 12F over 90 minutes. Hope this helps, and Im curious to know what substrate you use?
FYI if you don't need that much water you can calculate the water temp by using a straight ratio. Say if you had 9 gallons of 100F water, and 1 gallon of 200F water. You multiply the temp by the percent of water and add them up. So 9/10=90% and 1/10=10%, then .90x100+.10x200=110F. you could make this a lot more complicated if you wanted to use thermodynamics, but u don't have to.

i've never used straw or dung only BRF cakes, got any suggestions for straw substrates?

yeah i did a couple of straight straw tubs the EXACT same way i outlined above! FYI I bought a $30 electric weed eater to shred my straw, I tape a sheet inside the same trash can and shred it that way. It really saves a lot of hassle. Hope you give it a go...
