Fruiting Some Shiitake (S75 & Night Velvet)
    #15635154 - 01/08/12 02:15 PM (12 years, 1 month ago)

Shiitake 75 & Night Velvet

This is my first run through with these particular strains.
Blocks were made up on Sept. 4.

Recipe Per Block:

1 L compressed softwood pellets
1.6 L water
125 mL wheat bran
80 mL gypsum
400 mL rye spawn

This recipe makes 5L blocks that weigh 6 lbs. with 5% bran supplementation.
I used Unicorn Type 14A bags (0.5 micron) and sterilized for 120 minutes @ 15 psi.

2 Weeks In:

The blocks started to develop pins invitro at around 3 months.
I suspected this would happen since I used 0.5 micron bags instead of the more restrictive 0.2 micron.
The next series of pictures shows 4 of the most affected blocks.

After 3.5 months the blocks were cold shocked. Starting on Dec. 21 they were held at 10°C for 4 days.
On Dec. 26 the bags were removed, the blocks were slapped, washed in cold water and placed in the fruiting room.

S75

NV

The fruiting room is heated to 15°C with an oil-filled heater.
A single ultrasonic mister on a timer to keeps the humidity ~95%.

A fan blows fresh air in from outside 4 times a day for 1 hour. Since it's winter the air outside is cold and dry.
To combat this the fan timer also turns on an extra mister in the bucket and a heater in front of the fan.
When the fan runs the humidity in the room drops to ~60% and the temperature also drops a couple degrees.
This is done by design, both temperature and humidity cycling are important pinning triggers for shiitake.

The blocks are sprayed once a day to replace the moisture lost from the drying cycle.

Looking very good grobo. You're fruit production is looking very nice and pinning is coming along nicely too.

Beautiful shiitake  making me hungry...

Did it require a full three months to brown?

Didn't take a full 3 months, I didn't make a note of how long it took.
The original plan was to let them got to 4 months then fruit, but the invitro pinning moved things ahead.

SOUTHERN -
Nothing stands out with the blocks that haven't produce. They were all handled the same and are made from the same batch of substrate.
I guess it means I don't have everything quite dialed in yet. I'll post yields once it's all harvested.

This is only my second time fruiting shiitake. Still have a lot to figure out with substrate composition and fruiting parameters.
It was the first run with the room setup for winter conditions and catering to shiitake specifically.
Next time I'm going to try out a more complex hardwood based substrate.

Something I forgot to mention, I've flipped 5 out of 6 Night Velvet blocks over because of heavy pinning on the bottom.
In fact, I've never had any shiitake fruit from the top of the blocks.

So what's the secret to getting a shiitake block to fruit from the top?

Nice, and well documented as always Grobo.
Any ideas why they are all fruiting in the same direction ? ie along that bottom edge in the pics?

solarity -
The mushrooms are all facing the same direction so I could get them all in one picture

Unfortunately the mushrooms on the 2 back blocks in each picture have failed to mature.
Overall yields are low, but the S75 did put out some nice large specimens.
