Can I do that for pleurotus substrate?

I want to experiment with different kinds of substrates for use of oysters at home, sort of a project I've been wanting to do. I want to use coffee grounds, sawdust, woodchips, straw, and various grains. How would I go about sterilizing and inoculating the substrates? I was thinking doing it like the BRF tek and putting substrates in jars and elevating these in a pot for steam sterilization. I want to leave the oyster fungus to fruit in the jars though, because this is more of a colonization observation project.
So, can I fill jars with only the substrate (no verm), steam sterilize all the different substrates, and inoculate and leave the fungus to colonize/fruit in jars?
Please note, I am more interested in observing the fungus colonize and not harvesting. I have no use for gourmet mushrooms except for giving to family. I hate the taste.

cut up straw in small pieces,, cover with water that is 160 for 1 hours strain water,,  then poke straw with your colonized oyster spawn  in your jar, layer it if possible,, put lid on let colonize completley the put a lid with a 1/2 inch hole on the jar and watch the oysters push threw the hole,, its kinda neat yet simple

poke straw?
on your first question, no you can't make a pf type cake, with no verm layer, and inoculate and make it work. I'm no sure what your getting at with the second question

straw is a perfect choice for sub for oyster mushrooms.
if you want to use sawdust supplimented with coffee and bran you'll find increased yeilds.

i suggest full sterilization with supplimented sawdust. this can be done with a pressure cooker and some filterbags.
