Doesn't anyone know what the fungus is that they put in the hot sour soups at chinese restaurants? It's a serious question

auricularia auricula, or wood ear mushroom is often in it and i have also had it with pieces of straw paddy mushroom or shiitakes as well. The wood ear is the chrunchy/chrisp mushroom in the soup, it is grown on wood (sawdust blocks or logs), you can gather it wild or grow it, it isn't great if you try eating it by itself and really is best in soups.
