If a cake is allowed to fruit, and then is crumbled and used to spawn poo will this cause the mycellium to start growing again (with the new nutrients) and fruit again?

it depends on how spent they really are-it'll probly work fine if you follow the teks and dont change them, as well as having fresher cakes. If the cakes were allowed to have up to 5 flushes, your chances of getttin mycelium colonizing are a lot lower than if you just got 2 flushes out of it, then spawned.
