I apologize as I'm sure this is a question you get a ton, but ive searched and not found anything on it.

I'm growing ecuadorians and it's my first time. Everything has gone well, but all the mushrooms I've picked so far have been black inside, some worse than others. I've been figuring that these are just rotten and have been throwing them out, and then trying to give my cakes more air.

On my most recent harvest though, I had one that was actually ok. I cut it open and checked inside the stem and it was all white. However, a couple minutes later, the stem had turned blackish like the others.

Is this normal? Have I been throwing away good mushrooms?

Some have reported their mush having a blackish bluish oxydation.  Never before they're cut though.  Wait for a more definite response before trying anything.  :tongue:

No, they looked fine before I picked them. It's immediately afterwards that this is a problem. If it's just oxidation, I will be very relieved...I think.
It's definitely black/blue though not pure black. If my digital camera was worth a damn, I'd post pictures.

If they are black before you cut them open, then you probably have rot. This is usually seen when they are not dried or consumed quick enough after being picked. Rotting shrooms tend to smell very rank, similiar to a septic tank.

If they are white and turn dark blue, almost black, soon after picking (within 20 minutes) then you are looking at bruising. This is usually considered to be a sign of strong fruit, though I have not seen anything scientific to validate this claim.

Yea listen to Seuss, it does just sound like bruising.  :grin:
sucks if all those other fruits that got tossed were the exact same  :crazy:

I believe Seuss is right about this one. Sometimes bruising can be very heavy and turn the whole stem black. It is a good sign of potency .

Yeah, you've just described exactly what is happening.  I picked the second group today as soon as the caps spread out to try to avoid "rotting" and it still happened.  Fortunately, I've only thrown away a few and ill know better from now on.

If you are going to mess up, you did it the smart way. Better to toss something and be safe than to eat something and get sick.
