is wbs or vem/brf work better???

Few things you must note about grains:

First, search the Mushroom Cultivation forum about my input on rye grains.

Second, Verm/BRF is quite expensive, especially organic BRF, and it's messy too.

If you're going to use WBS, verm is definately needed as WBS itself cannot retain water well enough and most likely will dry out on you. WBS is an acceptable and widely used substrate; however, like all other grains a method of sterilization (preferabbly heat and pressure) is required to kill most of the bacteria inside the WBS. This is also true with rye, which I primarily work with.

I have to disagree, a little gypsum can help with the issue but even with out I had never had a problem with WBS cakes getting dry except when using filters on a jar *without* a metal lid.
