sphagnum moss and cow manure??

I've got cow manure 80% by volume and sphagnummoss 20% by volume in a mix. I am a very good grower of...herbs...but I've never tried mushrooms. But, I've been doing lot's of microbiology in my work so sterile techs are no problem. I've read up on the subject a lot too.

I have a shroombox (contains fully colonized mycelium on a substrate) coming in from smartbotanics. If I mix in let's say another 20-30% of hay to aerate the above mix, pasterurize it in oven bags, then it shouldn't be any probs to take the mycel from the growbox and get quite a quick colonizing of the cow manure/sphagnum/hay substrate?

I then plan to grow in styrofoam boxex which have myclarlike surface in them. Input please!

use straw (wheat stalks) not hay (dried grasses) if you intend to pasturise, hay contains seeds etc.. that would need sterilisation whereas straw does not & so only needs pasturisation allowing for positive bacteria

Oki. But what about the mix, will it hold too much water with 20% sphagnum?
