Cold Shocking

Ok, quick question: How long can a cake be cold shocked before it is harmed by the temps? Follow up: After you take the cake out of the fridge would it help to set the cake under a fairly intense light source to initiate pinning or should I just birth the little fella into the terrarium?

Good appendage. I've got 8 cakes that have been in the terrarium for about 8 days now with no sign of pins. The RH = 95-100% and the temp has fluctuated between 70 and 85 degrees depending upon room temp. None of the cakes in there now were cold shocked or dunked, would doing so help them along?

dunk before you put them in the terrerium. bigger yeild.

What mixture should be used? Should it be just straight spring water, or should it be (I think I read this in a tek somewhere) a small part peroxide (something like 1:10 or even more dilute than that).

I use 1:10 or slightly less...works great
