In the redmond area I found these at a local park hiking in the woods... Any idea of what they are? Or if they are edible?

Looks like Amanita pantherina and Pleurotus ostreatus to me at first glance. You'll need to verify that yourself, you didn't give any info. DH

Nice pictures. I think the top one is most likely an Amanita pantherina...
The white shelf-like mushroom could be some sort of Pleurotus, an underside picture could be helpful as well...

The first two are an Amanita, close to Amanita pantherina. There are a couple things you can check to help verify the ID. First, slice the mushroom in half vertically and bruise the inside to check for bruising reactions. Second, sniff it and see if there's an odor. Note that these mushrooms are poisonous and should not be eaten.
The last one looks like Pleurotus ostreatus, Oyster Mushrooms. They should have a white to pale lilac spore print and the gills should be straight edged, not serrated. These (assuming you verify the ID) are edible and commonly sold in groceries.

I would concure that you have Amanita pantherina (dont eat) and some oyster mushrooms. What kinda log were they growing from?

Oyster mushrooms are fairly good edibles. They have a mild flavor and mostly contribute texture (IMHO). They are relatively meaty for mushrooms, with thick flesh.
Make sure you check the things I mentioned above. There are some nasty mushrooms which look similar which can easily be distinguished if you look for those features.

Yes, cook 'em up and enjoy 'em. You should cook any mushroom you intend to eat. There are a few mushrooms which can be eaten raw, but any of the edibles can be eaten cooked. The only time you should eat a raw mushroom is if you can find a printed reference that states that that mushroom is edible raw.
