The best beef roast i've ever had!

I just made the best beef roast i've ever had, and I thought i'd share how I made it with you find peoples :-)

first, the beef roast is thawed (if you can't get it fresh).  By thawed, I mean so it's a cold slab of meat that is pliable, not frozen at all.  Then it is given a rubdown with rosemary, oregano, cilantry and basil leaves.  Some BBq sauce(your pick!) is added to the pan, and some vinegar is added as well.  Now we can kick it up a notch (BAM!) and add some good seasonings, I prefer emeril southwest seasoning,salt, pepper and sliced garlic. I also marinade it in chopped onions.  Make sure you have enough vinegar that it smells very vinegar-ry.  Let it soak in the fridge for at leats three hours.  Then, preheat your oven to 325.  Get a large turkey oven bag, coat the inside with flour as recommended, and pour the roast and the sauce into the bag.  Toss in 8 potatoes, and about 6 vidalia onions, pour in three cups of water (thats a BIG secret to bag-roasting right there!).  Leave a decent amout of air in there, seal it up, and cook for an hour fifteen minutes.  It's soooo juicy :-)


Also, a tip for meat in general.. Using your pressure cooker (yes, you CAN use it for something other than jar sterilization!) to pre-cook meat and do some flavor infusion is wonderful.    Put enough water and hickory smoke in the pressure cooker to totally submerge the meat.  Then cook for 10 minutes at 10psi.  this doesn't really cook the meat much, but the pressure infuses the hickory taste in there.  Take it out, cover in grilling sauce, and introduce it to your grill  ! :smile:

hell yea, I grilled some filet mignon tonight out on the grill. If you ever cook any fish / poultry, try this... Get the fish/poultry thawed out, soak it in italian dressing for a few hours in the fridge, then wrap in alum foil with ALOT of italin dressing in it (enough that the meat is almost submerged). Cookinmg this in the oven or on the grill causes it to parch in the oil... it's soooo juicy
