thats actually not true, searing does help to hold in moisture but it requires a broiler that runs around 1500-1800degrees. I don't know how you define 'locking in juices'.
searing is for flavor and texture, im not saying dont do it if you want, im saying that claiming it locks in juice has no factual basis.
its superstition, searing dries out the surface so technically its more likely to reduce overall juiciness.

I understand how you may think this, I've read lots of articles pertaining to this very thing, and worked in many a steakhouse where each chef has their on theory on this. From my experience alone, when you're broiling a steak at super high temps such as around 1600 you sear that outside so quick and at such high temps that you really dont give the inside much chance to lose much juice. There is a huge difference between cooking a steak on a grill/oven and cooking it at 1600.

I've never tried a boiled steak (as in steak dropped into a pot of boiling water), but I don't imagine that the product is very good compared to a grilled steak.
Sous Vide... boiled in a bag. it's actually pretty good if you hit it with a torch to give it a bit of a sear

you don't.
cooking steak properly requires very high heat and currently no nonstick pan made can withstand those temperatures. I would not even attempt since all you will get is:
A: flaccid brown meat swimming in juice
B: Cancer from the burning teflon smoke you inhaled all night.
go to home depot and get a cast iron pan for less than $20, then look up how to season it. I swear once you do, you will use it for everything.
