What are the main nutrients that mushrooms grow off?

I see that BRF has Thiamin, Niacin, and Iron as the main nutrients, and So does Karo syrup, with the exception of Riboflavin. Are these the basic nutrients mushrooms need to grow?

No, the main nutrients are the carbohydrates in various forms. Thiamin, Niacin & the rest are just promoting growth.
For example in MEA agar formula you have malt extract (carbohydrate) as the main nutrient, agar for gelling and then you can add yiest or peptone as the source for thiamin & other vitamins to achieve faster growth.

Fungi are heterotrophic organisms. This means that they utilise extracellular sources of energy, also called organic energy, organic material or organic matter, for their maintenance and growth.

Mushroom nutrients are derived from the breakdown of the chemical bond between carbon and either carbon or other elements such as phosphate. The extracellular sources of energy may be simple sugars, polypeptides or more complex carbohydrate.

Fungi can only absorb small molecules through their walls. For fungi to gain their energy needs, they find and absorb organic molecules appropriate to their needs, either immediately or following some form of enzymic alteration outside the thallus. The small molecules are then absorbed, used directly or reconstituted into organic molecules within the cell.

Because of the huge range of potential food sources, fungi have evolved enzymes suitable for the environments in which they are usually found. The range of enzymes, though wide in may species, is not sufficient for survival in all environments.

Fungi excrete a complex array of related enzymes for digestion. The enzymes tend to be present in multiple forms, based on a single genetic sequence, and include a range of isoenzymes, which arise from different genetic sequences.

The molecules absorbed through the plasmamembrane tend to be smaller than 5,000 Da, so only simple sugars, amino acids, fatty acids and other small molecules can be taken up following digestion. The molecules are taken up in solution.

I've often thought it would make sense that mushrooms/fungi would evolve, to complement plants instead of compete with them. Is that true? It seems that most things plants need to grow, mushrooms need either none of or much less of.
