Fried Polenta ala Doobie 1

Yessir, yessir, yessir...this came out pretty good, but any suggestions are welcome. Here's what I did. Good olive oil 2 cups of cornmeal 6 cups of water 1 t/s salt 3 cloves garlic 1 pinch sea aalt 2 cups ricotta cheee Some lemon juice
1. Take the water and get it boiling, once boiling add the regular salt and reduce to a simmer. Slowly add the cornmeal while stirring quickly and constantly. If you start to see lumps, stop pouring and beat the mixture. The mixture will get extremely thick. Stir until it comes away from the side of the pot cleanly.
2. Pour out mixture onto flat surface. Wet your hands and spread it out until it is 2 inches thick and rectangular. Put in the fridge to cool.
3. Chop up the garlic as finely as you can, sprinkle some sea salt over it and use the side of your knife and the salt to turn the garlic into a paste. Add the paste to the ricotta cheese. Add lemon juice to taste. There's your topping. Next time, I might add some roasted red pepper, finely chopped, as the mixture has kind of a smoky taste that can be built upon.
4. Get the polenta out when fully cooled and cut it into six-inch by two inch three inch rectangles.
5. Now, get some good olive oil and pour into a skillet until about one inch. Get it REAL hot so that if you drop a 1 inch cube of bread into the mixture it will turn golden brown immediately.
6. Fry the polenta until golden brown. It is important to have the oil really hot or else the polenta will turn out greasy.
7. Top with the ricotta topping and enjoy the fuck out of that shit, cuz its good.

that sounds delicious, doobs. you think it would turn out ok if there were some whole corn kernels in it? also, maybe a small bit of sugar?

Yeah, I don't think it would be a problem. I would precook the corn and combine it to the polenta after it has thickened.
