fanning without spray

Is it alright to fan cakes and casing without spraying the room down with disinfecting spray?

If the room is reasonably clean, and since you have allowed the myc to take over the cakes or substrate by the time you are fruiting, you should be OK......the main risk is when there is still exposed substrate that other organisms in the air can land on to colonize, if the myc has not covered it. You definitely don't have to sterilize/spray a relatively clean room to fan properly "birthed" substrate, that is, fully colonized cakes or properly done casings.
