why is the middle empty? every FC I've seen, the middle produces the best fruits, because of the micro-environment created by the mushrooms themselves in closed quarters. If you lost a couple to contams, don't be afraid to pick those cakes up and move them. In my experience this will result in better pinning.

thats the thing haha, I hadn't lost any to contams, the only reason I only had 11/12 Is because one was done before any of the rest so we decided to try to fruit it without dunking and lost it to dehydration. We picked about 4 cakes last night and got 61.3 gram wet. And the trip, was fucking amazing! Best, hardest, most mind opening experience with mushrooms I've ever had

So i have a question about the dunk after the first flush. Am I gonna want to wash off all the verm of the cakes I fully rolled, or just dunk them as is and then am I rolling them again once 2nd dunk is done?

I don't know what thread to quote, but I've definitely read RR say that you only roll once and then rinse it off after the first flush, dunk, and do not re-roll. That's because any contams that are on the mycelium after the first flush won't be able to flourish without the verm because of FAE, but with a nice layer of verm to protect them they'd be able to. So do not re-roll. But feel free to wait for a non-newb answer!
edit: Oh, here ya go! This is one of the numerous posts I've seen this answer at. http://www.shroomery.org/forums/showflat.php/Number/8468396#8468396

that dunk was fucking fantastic lol. ALL cakes now have pins and knots. Before only 5/11 did. And the RH is considerably higher and gonna stay at that range, the cakes are super moist, very nice pin sets (pins on the top of the cakes now D) so thank you all for the help! Will post more pictures soon once they start to fruit ((:
