The best bulk substrates all contain "poo" in one form or another. A manure / wheat straw based compost would have the least "poo" smell, as it is significantly bio/degraded.
Well aged & leached horse manure, has almost no "poo" smell, except a bit as you wet pasturize it.
If you want no poo at all, that about limits you to PF cakes, or straw. Straw (alone)is not all that great (one flush wonder & contam prone).
It takes poo to get shrooms like this.

Fresh Mushroom Compost
Ya either have to make it yourself, or buy it from a reputable sourse.
It should have a C/N ratio of around 17 to 1, with N in the area of 2.6.
Aged manure, Wheat straw, Spent brewery grain & some forms of silage are the primary components of a fresh mushroom compost.

As far as smell goes. . .the 'perfect cowpie' that is depicted in my avatar had absolutely no smell whatsoever. Even when steeped in hot water for an hour. It smelled like straw mixed with potting soil. Well aged zoo doo has quite a bit of wood material in it, smells like rosebeds to me

I thought mushroom compost was spent mushroom soil.
The cheap mushroom compost you buy in bags, for a couple bucks - in any garden supply place is SPENT mushroom compost. As in = used up. It is what is left -- after they harvest multiple flushes - off it.
FRESH MUSHROOM COMPOST is what commercial mushroom growers in the USA cultivate over 10,000,000 pounds of mushrooms ON .............. annualy.
They would not use it, if it was not the BEST - most cost effective substrate in existance. It looks like this.
It is made like this
This is what a commercial application looks like
Apply that..............to other mushrooms & you get mushrooms like this.

Mushroom compost is always the best for full scale *get your ass to the federal *pound you in the ass* prison" mushroom cult.
I find trays at over 5" in height and no less the 4" square to be perfect for the home grower using Brown rice, rye, WBS, etc with a casing of Vermiculite or similar. You can produce more then you would need for you and your buds in a large tupperware container in very stealth conditions.
